Our longtime colleague and employee, Dr. Michael Zeitler, provided one yesterday. He invited the team to a special get-together.
He brought three wheels of cheese imported directly from Trentino, each at a different stage of aging. The milk comes from cows belonging to a farmer friend of his who spends the summer at altitudes ranging from 2,000 to 3,000 meters.
Michael and the farmer met during Michael’s two-year sabbatical when he and his wife ran a small vacation guesthouse in Tione.
It was a true culinary experience with a wonderful backstory.
